Finally pickin'



 Yes, the summer vegetable garden has been slow starting this year but finally I'm seeing results.... cherry tomatoes, zucchini, green onions, hot peppers, pole beans, and lots of herbs harvested the past two weeks.

I keep a couple of plants inside but also planted basil seeds in between my tomato plants (along with marigolds to repel insects naturally), so I've got tons.  This past winter I really appreciated having little "cubes of basil" to use so decided to start freezing early and often.  In my book, you can never have enough garlic or basil!
It's easy, just wash, chop and freeze in useful small amounts.  I use muffin tins and ice cube trays in different sizes (mostly small) and just enough water to cover.  After frozen, just pop them out and put in a freezer bag.  Great to toss into sauces, soups, and even dips over the rest of the year.

Also enjoying garden fresh zucchini stir fried in a little garlic oil and herbs after using this handy spiral  peeler.  I got mine locally at Ocean State Job Lot for under $3  (I think they're $15 on Amazon).
Great for carrots, too.
