The lemons of my small Meyer lemon tree were ripe for picking so I did some internet searches and decided to make some candied lemon peel.

Started by squeezing out all the juice of 5 lemons
still using my mother-in-law's vintage green vaseline glass citrus juicer |
I put this wonderful lemon juice through a sieve and then measured out Tablespoons into small muffin tins which I froze. These small "lemon cubes" will go into a freezer bag for later use in cooking.
next I removed the pith
a melon baller worked great to scrape it off and not damage the peel |
use a pizza cutter to quickly slice them into small strips
to blanch the peels, drop them into cold water,
bring to a boil, then drain immediately
~ repeat this step 3 times ~
now stir 2 cups of sugar into 2 cups of water,
drop in the blanched drained peels
and simmer for 15 minutes
when done, strain the peels but SAVE the liquid as it will be a wonderful aromatic sweet and tart tasting "lemon syrup" that can be used for flavoring when
cooking, baking, or mixing drinks.
(good on pancakes)
Finally, toss the drained, dried lemon peels with sugar
and place in a covered container
